Dear Friends and Fellow Pork Enthusiasts, October is here, and it’s officially #Porktober24! 🐖🎉 We’re kicking things off with one of my favorite fall recipes: pork chops in tomatoes. Known in my kitchen as Casey’s Pork Chops with Stewed Tomatoes, this hearty dish brings comfort, flavor, and family together around the table. As we celebrate all things pork—our favorite protein and the people who bring it to life—we invite you to cook along and share in the stories behind the plate.

🥘 Kickoff #Porktober24 with a Recipe Straight from My Kitchen!

What’s a celebration without food? Growing up, pork was always at the center of our meals, and one of my all-time favorites was a dish my dad and I used to cook together: Bone-In Pork Chops with Stewed Tomatoes, Onions, Peppers, and Mushrooms. Over the years, I’ve added my own twist, serving it over pasta or alongside spaghetti for a filling, comforting meal.

Here’s the recipe for you to try at home—perfect for cozying up during these autumn nights!

Casey’s Pork Chops with Stewed Tomatoes

Ingredients:

• 4 bone-in pork chops
• 1 can (14.5 oz) of stewed tomatoes
• 1 onion, sliced
• 1 bell pepper, sliced
• 1 cup mushrooms, sliced
• 2 tbsp olive oil
• Salt and pepper, to taste
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• 8 oz pasta or rice (optional)

Instructions:

1. Heat the skillet: In a large skillet, heat olive oil over medium heat. Season the pork chops with salt, pepper, garlic powder, and Italian seasoning.
2. Sear the pork chops: Add the pork chops to the skillet, searing each side for about 4-5 minutes until golden brown. Remove the chops and set aside.
3. Cook the vegetables: In the same skillet, add onions, bell peppers, and mushrooms. Sauté for 5 minutes until they begin to soften.
4. Add tomatoes: Pour in the stewed tomatoes (including juices) and bring to a simmer. Add the pork chops back into the skillet, cover, and let simmer on low heat for 15-20 minutes until the pork is tender and cooked through.
5. Serve with pasta (optional): Cook your pasta according to the package instructions. Serve the pork chops with the stewed vegetable mix spooned over the top, and for a heartier meal, pair with your favorite pasta or spaghetti.
